There’s something so simple, nutty, and nutritious about roasting cauliflower. Not only does roasted cauliflower taste different than the raw vegetable itself but adding simple seasonings like these two variations below make it one side dish that’s sure to WOW any weeknight meal.

Spice Up Your Side Dish Game

Looking for a vegetarian base for your next taco Tuesday? Or how about a substation for Mexican rice? Then give this cilantro-lime roasted cauliflower a try! Fresh lime and dried cilantro provide all of the flavors of your typical taco Tuesday, with less carbohydrates and more fiber than your traditional side.

Or maybe you're looking for something that packs more of a punch. Curry powder is usually a mixture of turmeric, chili powder, ground coriander, ground cumin, ground ginger and pepper, and can be bought in mild, medium or hot strengths. A little goes a long way and gives the cauliflower a bright yellow coloring. The spice blend is rich in anti-inflammatory compounds and consuming it may help reduce oxidative stress, boost heart health, and improve blood sugar levels, among other potential benefits. The best part is that curry powder makes an excellent addition to a wide array of recipes.

Whichever flavor variation you decide to try when roasting cauliflower, just know you can’t go wrong with this blank canvas of a vegetable. Roasted cauliflower will absorb any seasoning you use, bring out lots of flavor and sweetness, and remain a go-to vegetable for many meals to come.

Cilantro-Lime Roasted Cauliflower

Yield: 4 servings

Ingredients:

6 cups cauliflower florets
2 Tablespoons olive oil
2 cloves garlic, minced
1/4 teaspoon salt
1 teaspoon cumin
1/4 cup fresh cilantro
2 Tablespoons fresh lime juice

Directions:

Preheat oven to 425 degrees F.

Toss the cauliflower in a large bowl with olive oil, garlic, salt, and cumin. Spread cauliflower in an even layer on a large, rimmed baking sheet and roast in oven for 15 minutes. Stir, then roast for an additional 10 minutes. Remove from oven and drizzle with fresh lime juice and cilantro before serving.
