Love fettucine alfredo? Our tasty shrimp and chicken “caulifredo” recipe puts a healthy twist on this classic pasta dish. We amped up the nutrition and reduced the fat and calories by using cauliflower in the sauce, whole-wheat pasta, lean protein and extra veggies.

Shrimp & Chicken Caulifredo Pasta

Yield: 8 servings

Ingredients:

1 large cauliflower head
1 cup low-sodium chicken broth
2 garlic cloves, minced
1/4 cup parmesan cheese
1/4 cup fat-free sour cream
1/2 cup fat-free milk
16 ounces whole-wheat linguini
1 Tablespoon olive oil
1 cup sliced red bell pepper
1 cup sliced yellow bell pepper
1 small yellow onion, chopped
1 teaspoon red pepper flakes
1/2 teaspoon Italian seasoning
1/4 cup of fresh basil, chopped (divided)
1 teaspoon oregano
1/2 teaspoon white pepper
1 pound Kroger Simple Choice thinly sliced chicken breast, cut in to strips
1/2 pound medium-sized raw shrimp, peeled and de-veined

Directions:

Clean and chop the cauliflower into quarters. Pour the low-sodium chicken broth into a medium-size pan and add the cauliflower. Simmer for 15-20 minutes or until fork tender. Remove the cauliflower (reserve remaining broth to thin cauliflower mixture as needed) and place in food processor. Add the garlic, parmesan cheese, sour cream and milk and puree until smooth.

Cook pasta according to package directions.

Heat olive oil in frying pan over medium heat, and add red and yellow bell pepper and onion. In a medium-size bowl mix red pepper flakes, Italian seasoning, 1 tablespoon basil, oregano and pepper. Add the chicken strips and toss to season. Add the chicken mixture to the pan with peppers and onions and heat until chicken is cooked through. While chicken is cooking, season the shrimp with 1 tablespoon fresh basil, then add to pan.

Divide cooked pasta onto eight plates. Top with sauce and chicken and shrimp mixture and sprinkle with basil.
