Looking for something different to bring to your holiday gatherings this year? Give this cranberry salsa a try! While cranberries are a seasonal favorite food, we sometimes forget there are other ways to enjoy them besides in baked goods or as a sauce. And when so many other holiday dishes are calorie-dense and full of fat, this salsa offers a pop of color and freshness to your spread – all for only 83 calories a serving.

In this recipe, cranberries offer a tartness that contrasts well with citrus juices, fresh herbs and spicy jalapeno. Mixed together, they create a perfectly balanced dip that pairs well with sliced apples or pears. Be sure to keep this recipe on hand because your guests will be requesting it every year!

 

Cranberry Salsa Recipe

Yeild: 10 servings (1/4 cup salsa plus 4 slices of fruit)

Start cooking
  • 12 onces fresh cranberries
  • 1/4 cup honey
  • 4 green onions, finely sliced
  • 1 jalapeno pepper, seeded and minced
  • 1/3 cup cilantro, chopped and packed
  • 2 Tablesppons grated fresh ginger
  • 2 Tablespoons orange juice
  • 2 Tablespoons lime juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 apples, sliced into 10 slices
  • 2 pears, sliced into 10 slices

Directions:

Add cranberries to your food processor and pulse until they are diced into small pieces.

Place chopped cranberries into a large bowl and mix with honey. Allow to sit for 30 minutes. Add green onion, jalapeño, cilantro, ginger, orange juice, lime juice, salt and pepper and stir until well mixed.

Chill for 2 hours or overnight. Serve with apple and pear slices.
