Whether you’re having friends over and need an appetizer to serve or you’re whipping up snacks for a quiet night on the couch with your DVR, these mini stuffed peppers are the perfect healthy nosh. They’d even make a great addition to a simple dinner with healthy sides like refried beans, baked tortilla chips and guacamole, and Mexican street corn or fresh green salad.

Filled with lean, seasoned ground turkey, these colorful cuties are topped with a cooling sauce of yogurt, cilantro and lime. They provide Southwest flavor without the saturated fat and extra calories that can be hard to avoid with the usual suspects, like cheesy nachos or fried foods, for example.

Turkey Taco Mini Stuffed Peppers with Cilantro Yogurt Sauce

Yield: 6 servings

Ingredients:

2 pounds mini bell peppers
1 pound ground turkey
3/4 cup water
2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1/2 teaspoon paprika
1/2 teaspoon crushed red pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried oregano
1/4 teaspoon black pepper

For the sauce:

1 cup Kroger non-fat Greek yogurt
1/2 cup fresh cilantro, finely chopped
1/2 teaspoon minced garlic
2 Tablespoons lime juice

Directions:

Preheat oven to 350º F. Slice 1/3 of each pepper off lengthwise, reserving for later use. Remove seeds from peppers. Remove stems from reserved pepper slices. Chop slices finely and set aside. In a medium skillet, cook ground turkey with chopped peppers over medium heat for 5 to 7 minutes, stirring occasionally until turkey is brown. Drain liquid. Stir in water, chili powder, cumin, paprika, crushed red pepper, garlic powder, onion powder, oregano and black pepper. Cook over medium heat for 5 to 10 minutes, stirring occasionally. Fill each pepper as full as possible with the turkey mixture and place on a baking sheet. Bake peppers for 13 to 15 minutes. While peppers are baking, combine Greek yogurt, cilantro, minced garlic

and lime juice in a bowl. Remove peppers from oven. Drizzle the cilantro yogurt sauce over the stuffed peppers and serve.
